Unfortunately, there isn't a particular place you can go to if you want to find a Rex. They can spawn anywhere on the map, but are more common near river banks since they come over there to eat other smaller dinosaurs. Once you find a location with Rex, you can keep defeating them and returning to the same spot until you find a good level.
AFAIK though, no there isn't. I believe some recipes made with regular polymer will even revert back to organic when ground. I just store organic poly as soap to stop decay (at a hefty price when grinding obviously) on my pve server. I realise this doesn't help in the instance you posted but hopefully someone has an idea.
