Best defense against cavalry for myself is put archers on a hill. and shield wall of infantry at the slopes. After the initial main charge, perhaps second, have infantry break/charge. With my own cavalry i have them in reserve and don't engage until after the enemy cavalry hits my infantry on most occassions.
Legionaries, Heavy Axemen and Darkhans tend to be the top dogs in terms of shielded heavy infantry. Legionaries if you want the heaviest armour and a deadly throwing weapon.
